Lonely Sunday

 I am all by myself this beautiful Sunday so I have some time to post.  Yesterday was a gorgeous California day, the sun was out and it wasn’t too hot.  We like to sleep in til around 8am on Saturdays and then we usually make a bowl of oats and head off to the farmer’s market.  This Saturday was different because it was our only weekend day together and so we skipped our usual routine.  We started off with a pancake breakfast, it was our first time trying a gluten free mix (from Trader Joes).

Brian had his plain but I topped mine with a banana, pecans, cinnamon and maple syrup.  They turned out okay, the pancakes themselves weren’t as fluffy as I would have liked but with all the yummy toppings they were edible.

After breakfast we rushed off to our training session with our dog trainer, we had a lot to work on this time because Lillie has been quite a handful lately. We grabbed lunch at one of our favorite places called Crazy Bowls and Wraps in Mission Valley, we arent in that area very often but we love the food. I had my usual veggie wrap with feta cheese and my choice of grain was quinoa.

Dinner was a last minute staple, we always keep items on hand for a go to dinner.  When we havent had time to plan we like to have a quick and easy meal that we always know we can make.  This dinner was put together from the following: frozen beef (we make a special trip to a butcher in La Jolla for local, free range, grass fed beef), organic marinara from TJ’s, spaghetti noodles that are made from jerusalem artichokes.  Brian whipped up the sauce and I was in charge of the salad.  I put a little bit of whatever we had on hand: organic lettuce mix from TJ’s, walnuts, feta cheese, grilled eggplant and zuchinni (frozen from TJ’s) and a homemade dressing of olive oil and balsamic vinegar. 
 
Our yummy we have no food in the house dinner.  
 
 
 
 
Finally I had a really bad sweet tooth so we made a shake, into our Blentec went: the last of the vanilla coconut milk ice cream, almond milk, coconut water ice cubes and pieces of a dark chocolate with hazelnut toffee bar.
